For a little while, we have been quiet, listening, building, and preparing for something that could change how the world experiences dining.

Behind the scenes, Carpathia~House has been moving through one of the most exciting chapters in our journey so far.

1. From the Coast to the City: Building a New Vision

We have made the move to Sydney, where we are testing a startup model that could reshape the future of hospitality for coeliacs and gluten free diners worldwide.

Through the New Wave Accelerator at UNSW, we have been refining our approach by speaking directly with diners, travellers, and hospitality leaders to deeply understand the trust and safety challenges behind coeliac safe dining.

Now we are entering the next phase, our Customer Discovery interviews, a crucial step to confirm whether our solution truly answers the urgent pain points so many live with every day.

Once we understand those insights, we will begin building our prototype to test both feasibility and viability before progressing toward a full MVP.

This is not theory. It is action guided by real stories, real people, and a real need for change.

2. Innovation in Motion: A New Gluten Free Phyllo Pastry

At the same time, we are working across states with food scientists and Coeliac Australia to pioneer something the gluten free world has long been waiting for, an authentic, natural gluten free phyllo pastry that meets verified coeliac safe criteria.

The first step is now underway, developing and testing the natural formulation. The next will be designing the manufacturing process and assessing production feasibility, with a clear path toward future certification.

It is not just about pastry. It is about trust, innovation, and bringing back culinary traditions that too many had to give up.

3. The Bread That Started It All

And finally, something close to our heart. We are preparing to launch our first bread range for local pickup within the next two weeks.

We will begin with two key loaves:

  • Carpathian Hearth, our coeliac safe signature bread.
  • Manna, a vegan and allergen safe creation made with pumpkin seed and agave.

Every product is 100% Australian, sourced locally, and made without gums, additives, or compromise.

They embody the same spirit that drives everything we do, connection, authenticity, and care.

This Is Just the Beginning

Carpathia~House was born from a simple belief, that dining should be safe, inclusive, and joyful for everyone, especially for those who have long been left out of that experience.

We have been quiet because we have been listening. Now it is time to build.
